Ethnic studies professor strives to educate students on sound nutrition

Luz Calvo, associate professor of ethnic studies, is featured in a story in the “Oakland Local” on her highly successful attempt spring quarter to educate students in basic food knowledge.

ES 3999 – Ethnic Studies meets the Cooking Channel – was so successful that Calvo is hoping to make it a part of the regular curriculum at Cal State East Bay.

Calvo learned sound food sense growing up. She’s been a vegetarian since 1990, and a propagator of her own biodiverse, organic food as of 2006, when she was diagnosed with cancer.
